Folse's
new yogurt is a hit among food lovers

Lately it seems like every time John Folse's
Bittersweet Plantation Dairy introduces a new product, it sells
so well he has to add on to his Gonzales production facilities.
The latest: Bulgarian style, strained yogurt. It's as velvety as
sour cream, rich as ice cream, and tart cartons of the stuff are
flying off the shelves of Calandro's and Matherne's in Baton Rouge
and Whole Foods Markets in New Orleans. He's already at maximum
capacity and selling 10,000 cartons a week at more than $2.50 a
pop. "I'm in the process of doubling the size of the dairy
now to 8,000 square feet," Folse said. Dairy manager Dimcho
Dimov, who Folse calls his "Saint from Bulgaria," is the
influence behind the development of Folse's traditional Eastern
European cheeses and butters. Folse adds the distinctive Louisiana
flair.
Folse's dairy continues to crank out new
products utilizing Dimcho's Bulgarian know-how. Like chocolate butter,
made with Bulgarian style butter, chocolate, ground up pecans and
sugar. "There's already a lot of butter on the shelves, I knew
we had to do something unique and different," said Folse. (Tom
