Yields: 4 Servings

Comment: This combination of Salmon, tomatoes, garlic and olives is tart, fresh and a delight to the taste buds. It’s a treat all willenjoy.   

1 (10-ounce) fresh sushi quality salmon filet, finely diced
4 tbsps extra virgin olive oil
3 large cloves garlic, thinly sliced
2 tbsps finely diced green olives
lemon juice to taste
salt and pepper to taste
ripe tomatoes, peeled, seeded and diced

In a saucepan, heat oil over low heat. Add garlic and fry until light golden. Remove garlic from oil and reserve both. In a bowl, mix together salmon, green olives, lemon juice and season to taste with salt and pepper. On a plate, ring mold salmon mixture. Toss tomatoes with garlic and a little reserved oil and season to taste with salt and pepper. Place a small pile of tomatoes on top of salmon tartar. Arrange chips in tomatoes to garnish.
