SALMON TARTARE MARTINI STYLE

Prep Time: 40 minutes
Yields: 4 – 8 servings

Comments:
Although most people associate tartare with beef personally I love fish tartares. For those of you who have never tried this specialty this is a recipe that should make you long for more.
 
Ingredients:
¾ pound salmon, cut into ¼ inch cubes
2 tabs Dijon mustard
2 tabs pureed canned chipotles
¼ cup capers, drained
½ cup finely minced red onions
¼ cup scallions
3 tabs olive oil
3 tabs finely chopped dill
¼ cup vodka
8 fried tarro chips (store bought in a bag), garlic croutons, or chackers
Salt and pepper to taste
Dill leaves for garnish

Method:
Combine all ingredients except Vodka and chips in a medium bowl. Hand blend gently as not to break or mash the salmon cubes. Divide tartare among martini glasses, drizzle with vodka and garnish with chips and whole dill leaves. **Tuna may be substituted for the salmon.
