Prep Time: 1½ Hours
Yields: 4 Cups

This delicious home-style dip offers an abundance of flavor and should be served hot with colorful vegetable chips, tortilla chips or French bread croutons.

3 large Vidalia onions, thinly sliced
2 tbsps butter
1 (8-ounce) package cream cheese, softened
1 (8-ounce) package Swiss cheese, shredded
1 cup grated Parmesan cheese
1 cup mayonnaise
1 bag sweet potato chips

Preheat oven to 375°F. Lightly grease a 1½-quart baking dish and set aside. In a large skillet, melt butter over medium-high heat. Add sliced onions then cook 30–40 minutes or until onions are caramel colored, stirring often. In a large mixing bowl, combine caramelized onions, cream cheese, Swiss cheese, Parmesan cheese and mayonnaise, stirring well to incorporate ingredients. Spoon dip into prepared baking dish and place into oven. Bake, uncovered, 30 minutes or until golden brown and bubbly. Serve with sweet potato chips.
