HERB-AND-HORSERADISH CRUSTED BEEF RIB ROAST

At one time, turkeys were one of the only main centerpieces for the holiday table, but today beef and game are becoming popular for many families across America. Horseradish and herbs make this elegant rib roast a special treat.
Ingredients:
1 (15–17 pound) beef rib roast, bone-in
1 cup prepared horseradish
1 cup unsalted butter, softened
¼ cup minced garlic
¼ cup chopped thyme
3 tbsps chopped rosemary
3 tbsps chopped sage
salt and black pepper to taste
granulated garlic to taste
Method:
Preheat oven to 325°F. In the bowl of a food processor, combine butter, horseradish, minced garlic, thyme, rosemary and sage. Processes until a smooth paste is formed then season to taste using salt and pepper. Stand roast in a large roasting pan and season well with salt, pepper and granulated garlic. Set roast fatty side up then spread horseradish-butter mixture all over the top of roast. Bake 3½ hours or until internal temperature reaches 125°F for medium-rare. Transfer the roast to a carving board and let rest at least 20 minutes or for up to 1 hour before serving. |
