Latkes

Comment:
Latkes are pan-fried potato pancakes made from seasoned grated potatoes. These potato cakes are traditionally eaten on Hanukkah, the Jewish festival of lights. Many fried foods are eaten on this holiday because oil is a reminder of the miraculous oil that burned eight days, giving origin to the celebration. Potato pancakes is a favorite dish of the Germans of Louisiana.

Ingredients:
4 cups white baking potatoes, peeled and grated
1 large onion, chopped
1½ tsps salt
2 tbsps flour
black pepper to taste
2 eggs
¼ cup vegetable oil

Method:
Squeeze liquid from grated potatoes. Combine potatoes, onions, salt, flour and pepper. Lightly beat egg then stir into mixture. In a skillet, heat oil over medium-high heat. Form the mixture into medium-sized patties. Brown on one side, turn and brown lightly on the other. Repeat until all potatoes are cooked. Serve with applesauce, cottage cheese, yogurt, sour cream or Creole cream cheese.
