BLACK AND WHITE GRANOLA PARFAIT

Yields: 4 Servings

Comment:
This is a wonderful parfait not only for its taste but also for its eye appeal. Around 4th of July, feel free to omit the dark chocolate and present a red, white and blue parfait for your Independence Day guests.

Ingredients:
1 cup defrosted frozen strawberries
1 cup good quality granola
1 cup fresh Louisiana blueberries
2 cups prepared white chocolate mousse
2 cups prepared dark chocolate mousse
4 tbsps cool whip

Method:
In a tall decorative parfait glass, place 2 tablespoons of strawberry mixture at bottom of glass. Using a pastry-piping bag, pipe ¾-inch of prepared white chocolate mousse over berries. Top with 1 layer of granola and blueberries. Pipe in a layer of dark chocolate mousse and once again, add another layer of strawberries. Add an additional layer of white chocolate mousse, granola and blueberries then top with 1 tablespoon cool whip. Continue until all 4 glasses are complete. Place in refrigerator for 30 minutes prior to serving. NOTE: You may wish to use a homemade mousse recipe for easy preparation. Many stores carry an instant mousse mix that only requires heavy-whipping cream as an ingredient. Either will work fine in this recipe.
