BRANDIED PEACH PARFAITS

Yields: 4 Servings

Comment:
When it comes to ice cream parfaits, there is none better than those made with fresh peaches in season. If peach ice cream can be found in your local market, this is the perfect accompaniment.

Ingredients:
2 cups fresh peaches, peeled and diced
3 tbsps butter
½ cup sugar
1 tbsp lemon juice
¼ cup water
¼ cup brandy (optional)
8 scoops low-fat peach or vanilla ice cream, softened
4 tbsps cool whip
peach nectar (optional)
1 tbsp ground nutmeg

Method:
In a heavy-bottomed saucepan, melt butter over medium-high heat. Add sugar, lemon juice
and water and bring to a rolling boil. Reduce to simmer and cook 2–3 minutes or until a simple syrup is achieved. Add peaches and cook until warmed thoroughly. Do not over-cook. Remove from heat, add brandy then return to heat, taking care as brandy may flame. Cook 1 additional minute and remove from heat. Into a footed compote or dessert bowl, add 2 scoops of ice cream and top with equal portion of brandy peach. Add cool whip and peach nectar then top each bowl with a pinch of nutmeg.
