Zwolle Tamale Pie

Yields: 6-8 Servings

Comment:
Turn a regular school night into a fiesta with this fun and simple dish. All the flavor of tamales, without all the fuss.

Ingredients:
1 pound ground beef
1 cup onions
½ cup celery
½ cup bell pepper
¼ cup garlic, minced
½ teaspoon cumin
1 tbsp chili powder
1 (14-ounce) can tomatoes, diced and drained
¼ cup mild green chilies, diced and drained
⅔ cup frozen corn
1 (8-ounce) package cornbread mix
⅓ cup milk
1 egg
1½ cup grated cheddar cheese
salt and pepper to taste

Method:
Preheat oven to 400º F. In a skillet, cook ground beef until well-browned. Add onion, celery, bell pepper and garlic. Cook 5 minutes or until vegetables are wilted. Add cumin, chili powder, tomatoes, chilies, and corn. Blend well and remove from heat. Season with salt and pepper. In a separate bowl, blend cornbread mix, milk, and egg.  Pour cornbread mixture into a greased 8” x 11.5” pan.  Pour meat mixture over cornbread layer.  Sprinkle cheese on top.  Bake 30-45 minutes.
