John’s Favorite Oatmeal Cookies

Prep Time: 30 Minutes
Yields: 2½ to 3 Dozen Cookies

Comment:
Warm, comforting, just like Grandma used to make.  These full-flavored, old-fashioned cookies are still a winner in my book. Served with a glass of ice-cold milk they are guaranteed to make you smile.

Ingredients:
1 cup butter
2 cups brown sugar
1 tsp pure vanilla extract
2 eggs
2 cups plus 2 tbsps all purpose flour
½ tsp salt
1½ tsps baking soda
2 tsps cinnamon
2 cups old-fashioned oatmeal
1 cup chopped pecans
1 cup golden raisins

Method:
Preheat oven to 350º F.  In a large mixing bowl, cream butter, sugar and vanilla.  Add eggs one at a time and mix well.  In a separate bowl, sift together flour, salt, soda, and cinnamon.  Add flour mixture, oatmeal, pecans, and raisins and blend well.  Mixture will be very thick.  Spray cookie sheets with cooking spray.  Drop by rounded tablespoons onto cookie sheets.  Flatten dough to about ½ inch.  Bake for 15 minutes until golden brown. Enjoy!
