Oven-Barbecued Chicken

Serves: 6 Servings

Comment:
If done properly, on one will be able to tell the difference between pit barbecue and this recipe. This technique was originally given to me by an old chef who loved barbecue. When his health did not permit him to cook outdoors, this resulted.

Ingredients:
2 2-½ pound fryers
½ cup melted butter
½ cup Worcestershire sauce
¼ cup hot sauce
¼ cup liquid smoke
¾ cup brown sugar
salt and cracked black pepper to taste
granulated garlic to taste
chili powder to taste
1-½ cups barbecue sauce

Method:
Preheat oven to 350 degrees F. Cut chicken into serving pieces, rinse under cold water and set aside. In a large baking pan with a one-inch lip, space chicken evenly, skin side up. Coat on all sides with the above ingredients except water and barbecue sauce. Once well coated on all sides, return to the skin side up position. Add water into the bottom of the baking pan and place on center rack of oven. Bake approximately one hour or until chicken is well browned. Using a one-inch brush, coat chicken well with barbecue sauce and allow to cook an additional 10-15 minutes. Remove and serve.
