SALMON TARTARE MARTINI STYLE

Prep Time: 10 minutes
Yields: 4–6 servings

Comments:
Although most people associate tartare with beef, personally I love fish tartares. For those of you who have never tried this specialty, this is a recipe that should make you long for more.
 
Ingredients:
¾ pound salmon, cut into ¼-inch cubes
2 tbsps mustard
2 tbsps pureéd canned chipotles
¼ cup capers, drained
½ cup finely minced red onions
¼ cup scallions
3 tbsps olive oil
3 tbsps finely chopped dill
salt and black pepper to taste
granulated garlic to taste
¼ cup vodka
8 fried tarro chips, garlic croutons or crackers
dill leaves for garnish

Method:
In a medium bowl, combine all ingredients except Vodka and chips. Gently blend mixture with hands, carefully not to break or mash salmon cubes. Divide tartare among martini glasses, drizzle with vodka and garnish with chips and whole dill leaves. Tuna may be substituted here for the salmon.
