GREENS FRITTATA

Prep Time: 30 minutes
Yield: 1 Frittata

Comment:
This is a quick dish Jane Dunn created for a wonderful dinner entrée.

Ingredients:
1 cup wild greens
2 eggs, beaten
¼ cup olive oil
¼ chopped onion
salt and black pepper to taste
granulated garlic to taste

Method:
In a skillet, heat olive oil over medium high heat.  Stir-fry greens and onion until tender.  Pour eggs over the greens and slightly stir to mix.  Add salt, pepper and granulated garlic to taste.  Cover and cook on low until the eggs are set.  Garnish with cheese if desired. NOTE: It is best to use a non-stick skillet when preparing this dish.
