HERB-ENCRUSTED LAMB LOLLIPOPS

Yields: 4 Servings

Comment:
In this dish, the lamb has been seasoned with herbs to enhance the flavor of the meat. For a fun presentation, french the lamb chops and scrape the meat off the bone. Eat it with your hands like a lollipop.

Ingredients:
1 rack of lamb, frenched
salt and black pepper to taste
granulated garlic to taste
¼ cup fresh herbs (tarragon, thyme, basil), mixed and chopped
1½ cups rice flour
¼ cup vegetable oil

Method:
Cut rack of lamb into chops. Season with salt, pepper and granulated garlic. Pat herbs onto both sides of each chop then dredge in flour. In a medium skillet, heat oil over medium-high heat. Sauté each chop 5 minutes per side until browned. This dish is wonderfully complemented by a salad such as Mixed Greens with Warm Strawberry Vinaigrette. (See recipe.)
