Basic Quick Bread

Prep Time: 1 Hour 15 Minutes
Yields: 1 Loaf

Comment:
A quick bread uses baking powder and baking soda instead of yeast to help it to rise. The bread does not require kneading or rising time before baking. Quick bread recipes range from savory to sweet and can have any number of fruit, vegetable and nut ingredients.

Ingredients:
2 cups flour
½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup butter, softened
¾ cup sugar
2 eggs
1 cup buttermilk

Method:
Preheat oven to 350°F. Grease and flour a standard loaf pan. In large bowl, combine flour, baking powder, baking soda and salt. In a separate mixing bowl, beat butter and sugar with an electric mixer on high speed 3 minutes or until light and fluffy. Blend in eggs then add buttermilk. Mix in dry ingredients on low speed until blended. Spoon batter into loaf pan. Bake 1 hour or until toothpick inserted in center comes out clean. Let cool in pan 5 minutes. Remove from pan and cool 1 hour on a wire rack before slicing.
