“Reaping Rewards of the Herbal Harvest”

Sun-dried Tomato Pesto Sauce

Prep Time:  15 Minutes
Yields:  6 Servings

Comment:
Easy to prepare, this zesty pesto can be used as a spread or combined with warm pasta as a main dish.

Ingredients:
¼ cup walnuts
½ cup sun-dried tomatoes, packed in oil
¼ cup Parmesan cheese, grated
1 clove garlic
2 tbsps olive oil
Salt and black pepper to taste

Method:
Preheat oven to 375º. Drain oil from tomatoes and discard. Spread walnuts on baking sheet and toast in oven for 7-8 minutes, then let cool. In a food processor, combine all ingredients and process until desired consistency is achieved.
