LEMON AND HERB VINEGAR

Yields: 6 Cups
Lemony vinegar is a refreshing change for salads. This recipe adds herbs and garlic for extra flavor.
zest of 4 lemons, cut into twirls
1 bunch lemon-scented thyme
3 bay leaves
4 cups white wine vinegar
2 cups white wine
6 cloves garlic, peeled and lightly chopped
In a large mixing bowl, whisk together all ingredients until well combined. Pour mixture into large sterilized jar with lid. Seal jar and allow mixture to infuse at room temperature at least 1 month. Using a sieve, strain mixture into sterilized bottles, discarding contents of sieve. Store vinegar in cool, dark place.
