This refreshing dessert is part fruit smoothie and part snowball. It’s a sweet, healthy way to keep cool during the summer.
2 cups cantaloupe, cut into ½-inch cubes and frozen
2 cups honeydew melon, cut into ½-inch cubes and frozen
1 cup water, divided
2 tbsps granulated sugar, divided
mint leaves for garnish
In a blender on high speed, purée cantaloupe, ½ cup water and 1 tablespoon sugar until fruit is smooth and pourable. Transfer fruit mixture to medium-sized bowl and keep chilled. Repeat process with honeydew melon. To assemble, spoon alternating layers of equal amounts of puréed cantaloupe and honeydew melon into glasses. Continue until glasses are filled. Garnish each with sprig of mint and serve immediately.
