Over seventy million pounds of avocado will be consumed on Cinco de Mayo. This recipe will make your avocados say, “Olé”!
2 ripe Haas avocados, halved, cored and peeled
2 tbsps minced red onion
1 fresh Serrano or Jalapeno pepper, seeded and minced
salt and black pepper to taste
granulated garlic to taste
juice of ½ lemon or lime
Into a large glass bowl, place avocado meat. Using a large fork, mash avocados roughly, leaving some small chunks. Add remaining ingredients, stirring gently until well blended. Serve immediately with chips or as a garnish for other dishes.
