Turkey Club Salad Wrap

YIELDS: 4 Servings

COMMENT: With school is about to start again, busy mothers have more to worry about than what to cook for supper. Here is an easy recipe that includes everything you need to make a healthy meal–veggies, meat and bread.

INGREDIENTS:

  • 4 large flour tortillas
  • 2 slices smoked turkey (½-inch thick)
  • 4 cups salad mix
  • 1 cup shredded Cheddar or Swiss cheese
  • 1 cup diced tomatoes
  • 8 slices cooked bacon
  • ranch dressing

METHOD:
Place the flour tortillas on a flat surface. In a large mixing bowl, toss salad mix with desired amount of dressing. Divide the salad among the four tortillas, mounding the salad in the middle of each tortilla. Top each salad with turkey, cheese, tomatoes and bacon divided evenly among the tortillas. Fold the 2 sides of the tortilla over the salad to close the ends, then fold the bottom edge of the tortilla all the way over the salad, completely covering it. Roll the wrap tightly all the way to the top edge until a burrito-like package is formed. Wrap in aluminum foil so that it can be easily held in your hands. Peel away the foil as the wrap is eaten. You can use any dressing or meat you like in this wrap. The meat may also be tossed in a sauté pan for a few seconds to heat it thoroughly.
