Divine Divinity

This very simple recipe yields delicious, perfect candy every time. Many divinity recipes require a rather exact chemistry of sugar and karo syrup, but this one eliminates any potential problems and produces perfect divinity without fail. They’ll think you labored long and hard to produce these traditional Southern delights.

Ingredients:
1 pint marshmallow cream
1 tbsp vanilla
2 cups sugar
½ cup water
pinch salt
¼ cup chopped nuts

Method:
Butter a 9”x 9” pyrex dish or line with wax paper.  Combine marshmallow cream and vanilla in the large bowl of an electric mixer with whip or blade attachment. In a large saucepan, combine sugar, water and salt. Bring to a rolling boil and continue boiling until mixture registers 240º on a candy thermometer. Immediately pour hot syrup slowly into marshmallow. Whisk until candy loses its gloss. Stir in nuts and press firmly into dish. Once cool, cut into 1” squares. For divinity drops, you can simply drop teaspoons of hot mixture onto wax paper or a buttered cookie sheet to cool.
