Clare’s Chicken Liver Paté

Prep Time: 2 Hour
Yields:25-30 Appetizer Portions

Comment:
Borrowed from a favorite aunt, this rich, flavorful spread is simple to make and is perfect for holiday gatherings. It can be prepared a day ahead, but for best flavor should be consumed within a couple of days. As with all liver-based dishes, the flavor becomes more pronounced over time.

Ingredients for Meatballs:

8 strips bacon
2 pounds chicken livers
2 bay leaves
5 cloves fresh garlic
4 ounces Philadelphia Cream Cheese
¼ pound unsalted butter
¼ cup cognac or white wine

Method:
Preheat oven to 350º F. Line a round ovenproof casserole with bacon. Add chicken livers and season lightly with salt and pepper. Tuck bay leaves and garlic under livers and bake covered for 40-45 minutes. Remove and cool for 45 minutes.  Place all but bay leaves in a food processor with cream cheese, butter and cognac.  Purée until smooth. Adjust seasonings if necessary, pour into serving bowl, cover and chill at least 4 hours prior to serving. Serve with crackers or French bread croutons.
