Yields: 4 Servings

For those craving a burger with great flavor and less fat, quit looking. This is it!!!

Ingredients for Portobello Relish:
4 large Portobello mushrooms, sliced (¼-inch) on the bias
3 tbsps extra-virgin olive oil
1 large shallot, sliced
2 tbsps chopped fresh thyme
salt and black pepper to taste
⅓ cup dry sherry or marsala

Ingredients for Cane Syrup-Worcestershire Onions:
1 large onion, thinly sliced
¼ cup Steen’s™ cane syrup
3 tbsps Worcestershire sauce
2 tbsps butter
2 tbsps extra-virgin olive oil
salt and black pepper to taste
¼ cup apple cider or apple juice

Ingredients for Turkey Burger:
1½ pounds ground turkey
2 tbsps chopped fresh chives
2 tbsps chopped flat-leaf parsley
2 tbsps Dijon mustard
1 tbsp Worcestershire sauce
1 tbsp poultry seasoning
1 tbsp extra-virgin olive oil
½ cup softened butter
4 hamburger buns, split
1 cup shredded Monterey Jack cheese

Method for Portobello Relish:
In a medium skillet, heat 3 tablespoons olive oil over medium-high heat. Add mushrooms and brown 10 minutes, stirring often. Add shallot and thyme then season to taste using salt and black pepper. Cook 5–8 minutes or until mushrooms soften. Deglaze with wine then remove from heat. Set aside and keep warm.

Method for Cane Syrup-Worcestershire Onions:
In a skillet, melt butter in olive oil over medium-high heat. Add sliced onion and season to taste with salt and pepper. Cook 15 minutes or until softened, stirring occasionally. Add cane syrup, Worcestershire sauce and cider, bring to a simmer and cook 8–10 minutes, stirring frequently. Remove from heat, set aside and keep warm.

Method for Turkey Burger:
In a large bowl, combine ground turkey, fresh chives, parsley, mustard, Worcestershire sauce and poultry seasoning, mixing thoroughly. Divide mixture into 4 equal portions and form into thin patties. In a skillet, heat 1 tablespoon olive oil over medium-high heat. Add patties and cook 8–10 minutes or until desired doneness, turning once during cooking process. Remove from heat. To assemble the burger, spread softened butter on inside of top and bottom buns. Top each bottom bun with 1 turkey patty, an equal portion of mushroom relish and cane syrup-Worcestershire onions, then ¼ cup cheese. Cover with top bun and enjoy.
