EASY CRAB SOUP

Prep Time: 45 Minutes
Yields: 4 Servings

Comment:
This recipe is perfect for neutropenia (low white blood cell counts). A quick version when your in a pinch or just too tired from treatments to cook a big meal. You can use green onion as a garnish only when not neutropenic.

Ingredients:
1 pound lump or white crabmeat, picked for bones
1 onion, diced
2 tbsps margarine
2 tbsps AP flour
1¾ cups fat-free chicken broth
½ cup water
1 12-ounce can evaporated skim milk
3 green onions, sliced

Method:
In a saucepan, sauté onion in margarine until tender. Stir in flour and gradually add broth and water. Simmer for 20 minutes on low heat. Stir in milk and then fold in crabmeat. Garnish with green onions when not neutropenic.
