SEARED CHICKEN WITH TOMATILLO SALSA

Prep Time: 30 minutes
Yields: 4 Servings

Comments:
This dish is best served with an American style lager.

Ingredients:
4 boneless, skinless chicken breasts
3 tomatillos, diced
1 cup chopped avocado
½ cup sliced radish
¼ cup chopped cilantro
2 tbsps lime juice
½ tsp salt
¼ tsp red pepper flakes
1½ tsps poultry seasoning
¼ cup olive oil
1 cup sour cream

Method:
In a bowl, combine the tomatillos, avocado, radish, cilantro, lime juice, salt and red pepper flakes, mix well then set the salsa aside. In a separate bowl, season the chicken evenly with the poultry seasoning then set aside. In a large skillet, heat the olive oil over medium-high heat.  Add the chicken and cook 5 minutes.  Turn the chicken over and cook an additional 5–10 minutes or until cooked through.  Serve the chicken with the tomatillo salsa and top with 1 tablespoon of sour cream.
