GRAVLOX

Comment:
Gravlox is a Scandinavian name for salt-cured salmon. It is a popular part of Scandinavian cuisine; most gravlox recipes are made with vodka.

Ingredients:
8 (4-ounce) salmon fillets
4 tbsps coarse sea salt
3 tbsps light brown sugar
1 tbsp black pepper
1 bunch chopped dill
3 tbsps vodka

Method:
Drape plastic wrap over a glass baking dish making sure to leave enough to cover the dish completely. Place 4 of the salmon fillets skin side down in the baking dish. In a small bowl, mix together salt, brown sugar and black pepper. Sprinkle half of mixture over salmon in the dish. Cover the salmon with the chopped dill then pour the vodka over the fish. Sprinkle the remaining salt mixture over the remaining half of salmon fillets. Place the remaining salmon fillets on top of the first 4 fillets, skin side up, fold the plastic wrap snuggly over the entire salmon fillets. Place a board over the fish and weigh it down with a heavy object. Refrigerate fish for 24–36 hours, turning every 12 hours. To serve, separate the fillets, and carefully brush off the salt, sugar and dill. Cut into very thin slices with a sharp knife before serving.
