Chef John Folse has recently completed the filming of “Louisiana’s Food Heritage: The Encyclopedia Series” which will begin airing Saturday, October 21 at 11:30AM on the six-station LPB network. The new series, the eleventh collaboration between Chef Folse & LPB, is the companion to Folse’s best-selling cookbook, “The Encyclopedia of Cajun & Creole Cuisine.” The series will bring the book to life with visits to historic sites, exploration of the origins of some of our most revered recipes and interviews with Louisiana’s most notable historians and characters. Each episode of the 26-part series is dedicated to one of the seven nations that most influenced Louisiana’s culture and cuisine. Filmed before a live audience and featuring the recipes and music of each featured culture, this series truly shines a spotlight on what makes Louisiana so unique.
