Folse Begins Work on Next Cookbook
With book lovers still reeling from Chef John Folse’s last cookbook, “After the Hunt,” Folse and his team are beginning to work on the next tome in the Cajun and Creole series. “Hooks, Lies & Alibis,” the working title, is expected in bookstores December 2009, and will focus on Louisiana’s fishing culture and cuisine.
As with the last volume, Folse is inviting Louisiana anglers to submit recipes and photographs of their fishing adventures for possible inclusion in the book.
“Louisiana is blessed with fabulous cooks,” Folse said. “‘Hooks, Lies & Alibis’ is an excellent venue to preserve family recipes. Nothing excites me more than to discover a yellowed piece of paper with a recipe scrawled on it from a hunter or fisherman from days gone by.”
Folse is seeking unique family and camp recipes. While the focus of the book is saltwater, freshwater and shellfish, there are still many pages designated for breakfast items, desserts, side dishes, breads and beverages.
“I want recipes that I don’t have,” Folse said. “I need to see unique ingredients used in interesting or unusual ways. I have sauce piquante recipes, but I don’t have your grandma’s cocktail sauce recipe or Uncle Paul’s never-fail fish batter.”
Unlike previous cookbooks, Folse plans to organize the recipes by culinary technique. Chapters will include frying and sautéing; baking and roasting; grilling; boiling, poaching and steaming; and smoking and drying among several others. Folse determined this would be the most efficient means of showcasing Louisiana’s brimming waters featuring multiple preparation methods.
“Recipes are our heritage. They speak to our past: where we lived, what we ate, the professions we held,” Folse said. “I need recipes from the oil rig workers, the oystermen, the shrimpers, camp cooks, grill masters. In other words, everybody who enjoys fishing and cooking the catch needs to submit a recipe. We want to preserve their way of life through their recipes.”
Folse projects that “Hooks, Lies & Alibis” will mimic “After the Hunt” and “The Encyclopedia of Cajun & Creole Cuisine” in size and number of recipes.
